They can be used to train plants to grow in a specific direction, to pull branches out of the way of others, or just to support heavy parts of the plants. You could also use string or wire to accomplish something similar, but the plant yoyos have a unique ability that makes them far superior to other methods. The button toggles between locking the clear string in place at a specific length, or keeping it under constant tension without having to re-tie strings. Let the tension of the plant yoyo pull the plant a bit, then lock the tension button down so it is fixed at that length. Then, after it has gotten used to that position, you can click the button again, adding a bit more tension--pulling the plant a bit more, then lock it down again in that position. It makes making these little adjustments so much easier than wrapping a wire or string, then re-doing it over and over again as the plant grows.
